Black Truffle Steamed Egg White with Tofu


Ingredients
200 grams of soy milk, 2 egg whites, 30 grams of morel mushrooms, 10 grams of Yunnan truffles, 5 grams of roe and a little Chinese toona sprout
 
Seasoning
2ml of truffle oil and 3g of salt
 
Steps
1. Soak morel mushrooms in clean water for 3 hours; change the water and wash them for later use.
2. Mix the egg white, soy milk, salt and truffle oil thoroughly. Steam them for 5 minutes. Let them cool and remove them. Meanwhile, thinly slice them and set them aside.
3. Take out the tofu and put it on a plate. Put the sliced mixture and morels on top, and decorate with roe and Chinese toona sprout.
 
Taste
